Spicy Turkey Left Over Soup
As it’s now the 29th December I really want to:
a. use up the last of the Christmas turkey and
b. eat healthy again after a week of rich food
So here is my “throw it all in “ spicy turkey left over chunky soup”
Ingredients
1 chopped onion
1 stick of chopped celery
1 chopped red pepper
2 sliced carrots
2 inches of chopped chorizo sausage
Any left-over turkey
A pinch of cayenne pepper
1 ½ pints of chicken or turkey stock
2 handfuls of green leafy vegetables (kale, spinach or cabbage)
Instructions
- Chop onion, celery, carrots, pepper
- Slice chorizo thinly and then chop each slice into 4
- Gently sautee chorizo with chopped onion, celery and carrots until they soften but not brown
- Add turkey and chopped red pepper along with stock and cayenne pepper.
- Gently simmer until carrots or softer but still with bite
- Add the chopped greens and simmer for 2-3 minutes more
- Serve
Healthy Christmas Cake

3 Cups of mixed dried fruit (soaked overnight in brandy or similar or hot water)
1 tsp ground cinnamon
1/4 tsp grated nutmeg
1 tsp vanilla extract
Zest and juice of an orange
3 tbsp. melted Coconut Oil
3 beaten eggs
2 cups of ground almonds
1 cup of chopped nuts of your choice
Instructions
1. Line a 10cm cake tin with greaseproof or baking paper cut a circle for the bottom and a strip to line sides, then grease
2. Preheat oven to 150 degrees c
3. In a large bowl mix together dried fruit, spices, vanilla extract, orange zest & juice, melted coconut oil and beaten eggs.
4. Add almonds and chopped nuts
5. Place the mixture in lined tin
6. Bake for 1-1 1/2 hours, keep checking from an hour and test with a skewer to make sure it is baked throughout
7. Remove and allow to cool.
Healthy Energy Bar Recipe
1 cup of Macadamia Nuts
1 cup of cashew nuts
1 cup of dates (soaked overnight)
2 cups of oats
1 tbsp vanilla essence…
pinch of sea salt
1/2 cup of desiccated coconut (optional)
1-2 tbsp Coconut Oil MeltedCombine all ingredients in a blender
Wrap in a piece of greaseproof paper, flatten to desired thickness.
Place in freezer for 20 minutes
